Former Solicitor in England and Wales, Simon leverages his significant experience in international legal matters and foreign law firms for the international development of Bunch law firm.

Simon also continues his second vocation as a teacher of English law, "legal skills," and international contract law to undergraduate, LLB, and LLM students at the Faculty of Law of the Catholic University of Lyon (UCLy), particularly within the double LLB program with City University of London.

Simon co-authored the textbook 'English Business Law' published in 2018 by Lextenso Domat Editions, with Cécile Le Gallou. An updated version concerning Brexit will be released in 2025.
